What are chilaquiles? They’re a traditional Mexican dish made with corn tortillas tossed in flavorful salsa, then topped with ingredients like crema, cheese, onion, eggs, beans, or slow-cooked meats. At Chilaquile Beast in Ogden, Utah, we do them a little differently. Our chilaquiles are inspired by our roots in Guerrero, Mexico, with family recipes, layered flavors, and signature sauces rooted in the traditions of La Abuelita. And while traditional chilaquiles can soften as they soak up the salsa, we keep ours crunchier—so every bowl has that perfect balance of crisp tortilla, bold sauce, savory toppings, and fresh flavor.
